Apple Cinnamon Muffins

Hey, long time no talk. The past few months have been unbelievably busy and quite honestly, my blog hasn’t been among my top priorities. The tides are changing however along with some new additions and I’m happy to start dedicating more time to this little spot.


You may have noticed that my blog now has a different name (!!) and there are a couple of reasons for this. The main one being that I hope to use my blog as a way to reach all different kinds of people and my aim is to appear (somewhat) professional while still being relatable. The other big reason is that the previous name never really spoke to me either. SO of course, because I’m me, I went through the entire process of changing my name twice. Because I’m both impulsive and indecisive! Anyways, point is that I’m content with the name and that’s that. If there was any time to re-brand, it was now.

Anyways… muffins. The recipe I bring to you today is both an oldie AND a goodie. My mom has been making these muffins ever since I was a small creature and they are terrific. Back in those days I would take out the apple hunks cause I was one of “those” kids, but now I can fully appreciate these muffins for all that they are. The apple is what makes these apple muffins. Eat your fruits kids. These muffins are moist, and have such a delicate crumb so you don’t feel all weighed down after eating them. And that cinnamon sugar topping pushes these over the edge. Between the apples and whole wheat flour, these practically count as health food. Hope you love this recipe.

Apple Cinnamon Muffins

Makes 12 Muffins


Ingredients

Muffins

  1. 1/2 c butter, melted

  2. 3/4c granulated sugar

  3. 1 egg

  4. 1 c buttermilk

  5. 2 apples, peeled and diced

  6. 1 c all purpose flour

  7. 3/4c whole wheat flour

  8. 1 tsp salt

  9. 1 tsp baking soda

  10. 1 tsp cinnamon

Topping

  1. 1 tsp cinnamon

  2. 2 T sugar


Instructions

  1. Set the oven to 375 degrees F and grease or line 12 muffin cups.

  2. In a large bowl or stand mixer using the paddle attachment, blend the butter, sugar, egg, and buttermilk.

  3. In a separate bowl, mix the flours, salt, baking soda and cinnamon until well combined. Combine the flour mixture with the buttermilk mixture to moisten. Fold in the diced apple chunks.

  4. Divide the mixture evenly between 12 muffin cups.

  5. In a small bowl, mix together the sugar and cinnamon for the topping. Sprinkle topping liberally over all the muffins.

  6. Bake the muffins in the oven for approximately 20 minutes, or until a toothpick comes out clean. Allow to cool and enjoy!
